If you love hummus dips, you will love these sandwiches. These Hummus and Carrot Sandwiches are healthy and nutritious, and made in just 5 minutes. I love hummus and I love carrots, so a great combo with that element of crunch which I seem to always crave at lunchtime.
- Half a pot of fresh Hummus dip
- 1 large carrot
- Multigrain bread
- Spread multigrain or wholemeal bread with hummus (reduced fat if you’re feeling extra good!)
- Grate the carrot
- Top with crunchy grated carrot. Perfect for everyone’s packed lunch box.
A quick tip: don’t make too far in advance of eating them, as they may go soggy if prepared the night before. So I would recommend making them early in the morning at the earliest, and NOT the night before. Let us know how you get on!
