Quick Microwave Chocolate Birthday Cake

Ingredients

  • 1 cup flour 250ml
  • 1 cup castor sugar 250ml
  • 4 teaspoons baking powder
  • pinch of salt
  • Sift the above ingredients together.
  • 45 ml cocoa powder
  • 1 cup hot water 250ml
  • 2 eggs
  • 60 ml oil
  • Whisk the above 4 ingredients together
  • To make the butter icing:
  • 140 g icing sugar
  • 100 g margarine but unsalted butter is better
  • 6 ml vanilla essence
  • 4 ml hot water
  • 20 ml cocoa powder

Instructions

  • Combine all the ingredients together and whisk well.
  • Place in a round microwavable container, lined with kitchen towel (to stop the cake sticking).
  • Cook for 7-8mins on high in a microwave.
  • Ice with your favourite icing.
  • To make the icing, simply beat together the ingredients until smooth. Ice your chocolate cake once cooled. Decorate with chocolate buttons, chocolate chips, mini rolo or marshmallows or sprinkles.
