Quick Microwave Chocolate Birthday Cake

Ingredients
- 1 cup flour 250ml
- 1 cup castor sugar 250ml
- 4 teaspoons baking powder
- pinch of salt
- Sift the above ingredients together.
- 45 ml cocoa powder
- 1 cup hot water 250ml
- 2 eggs
- 60 ml oil
- Whisk the above 4 ingredients together
- To make the butter icing:
- 140 g icing sugar
- 100 g margarine but unsalted butter is better
- 6 ml vanilla essence
- 4 ml hot water
- 20 ml cocoa powder
Instructions
- Combine all the ingredients together and whisk well.
- Place in a round microwavable container, lined with kitchen towel (to stop the cake sticking).
- Cook for 7-8mins on high in a microwave.
- Ice with your favourite icing.
- To make the icing, simply beat together the ingredients until smooth. Ice your chocolate cake once cooled. Decorate with chocolate buttons, chocolate chips, mini rolo or marshmallows or sprinkles.
