Carnation Celebration Cake

Carnation Celebration Cake is possibly the Ultimate Celebration Cake for Royal lovers, and is sure to impress and wow guests at any celebration including Royal birthdays, VE day (8 May each year for those that want to know) or the Queen’s birthday here in the UK.  If you fancy being a little patriotric and wanting a splash of colour on the table, and feel like making it, then the recipe is below for you to try.

Carnation Celebration Cake

Prep Time 15 minutes minutes
Cook Time 30 minutes minutes
Total Time 45 minutes minutes

Ingredients

  • 200 g plain flour
  • 405 g can Carnation Condensed Milk
  • Light
  • 2 eggs
  • 2 tsp vanilla extract
  • 150 g margarine or butter
  • 3 tsp baking powder
  • Filling:
  • 6 tbsp strawberry conserve jam
  • Frosting:
  • 200 g icing sugar
  • 100 g marg or butter softened
  • 2 tsp vanilla extract
  • 200 g mixed summer berries to decorate
  • You will also need:
  • 2 x 18cm 7in sandwich cake tins, base lined with parchment paper

Instructions

  • Preheat the oven to 180°C, 350°F, Gas Mark 4.
  • Place the flour, condensed milk, egg, vanilla extract, margarine and baking powder in a bowl and beat with an electric hand mixer for 2-3 minutes until pale and fluffy.
  • Spoon into the tins and bake for approximately 25-30 minutes until springy to the touch and golden brown. Cool slightly then transfer to a cooling rack to cool completely.
  • Place one half of the cake onto a serving plate and spread with the jam. Sandwich together with the other half.
  • Beat the icing sugar, butter and vanilla with a few drops of water to bring the mixture to a soft consistency. Spread onto the cake. Arrange the berries on top in a Union Jack shape if you like!

I shouldn’t really say this, but if you are really really pressed for time, or cannot get all the ingredients to bake this from scratch, but you love the look of this Carnation Celebration Cake, and fancy making it, you could buy a sponge cake base, that’s ready-made, grab the toppings, make the frosting, assemble together and voila. I am sure no-one would notice the difference!
