Lunch Box Idea 32: Juicy Deuce Raspberry Smoothie

Today we’re up to lunch box idea 32 in our lunch box ideas series. Our target is to hit 365 lunch box ideas, so we can truly say we’ve shared 365 recipe ideas with you!

The sun has at last come back to us and is shining brightly. Immediately my thoughts rush to the one word: “PICNIC!” There’s many a tweet already this morning of folks preparing a picnic and heading off to the local park or riverbank.

Now with Wimbledon just around the corner, I’m frantically clearing my desk of work so I can have one eye on the laptop, the other fixed to the TV!

Today we’re sharing a rather scrummie smoothie that can be whizzed up in moments.  Aptly called the Juicy Deuce, (coughs), it’s a mix of raspberries and yoghurt.

JUICY DEUCE

whizzed up in moments, a refreshing smoothie for lunch boxes and picnics

Raspberries and yogurt smoothie

Preparation time: 5 minutes

Cooking time: nil

Serves 4

To whizz this up, here’s the list of ingredients you will need:

  • 2 x 125g Alpro soya vanilla and raspberry alternative to yogurt
  • 500ml Alpro soya original milk
  • 2 x 125g fresh raspberries
  • 1 tablespoon honey, to sweeten if required
  • A large handful of ice
  • 4 slices fresh orange
  • 4 sprigs of fresh mint

Method:

Blend the yogurt, milk, all but a few of the raspberries (you need to reserve a few raspberries for garnish) and the ice together until very smooth. Taste and add some honey if desired.

Divide among glasses and decorate with the reserved raspberries, sliced orange and mint.

And voila!

You see, I said it would be quick!

If you’re popping it in a lunch box, either pour into a thermos to keep it chilled, or a screw top bottle, and keep chilled. So you’ll definitely need an icepack or two too…

Now as we’ve got our veggie patch going, with a kitchen herb garden, we can just skip outside and pick our mint…
