Plum Tomato and Rocket Muffin

Today the Plum Tomato and Rocket Muffin recipe we’re going to share with you is super quick! We just love quick and easy! So, what do I like about it? Well, it’s made using a muffin, you know, a savoury muffin, that is best toasted under the grill. So that immediately sets this recipe apart from just another sandwich recipe.

The recipe also uses Philadelphia, the cream cheese, which I love and a few other tasty ingredients. For me, it’s the combination of ingredients that sets it apart from others. It just makes lunch that little bit different from a regular sandwich. So today it’s the Plum Tomato and Rocket Muffin recipe, a muffin coated in cream cheese, tomatoes, with a smattering of rocket on top… and voila!

Plum Tomato and Rocket Muffin

Prep Time 2 minutes minutes
Cook Time 3 minutes minutes
Total Time 5 minutes minutes
Servings 1

Ingredients

  • 1 plain muffin
  • 2 plum tomatoes
  • 30 g (1 ½ oz Philadelphia Extra Light
  • A little rocket
  • Freshly ground black pepper for extra kick optional

Instructions

  • Split the muffin in half, horizontally and toast until lightly brown.
  • Slice the tomatoes.
  • Spread the Extra Light Philadelphia onto the toasted muffin and top with the sliced tomatoes and rocket.
