Lunch Box Idea 15 – Red Fruit and Almond Muffins

Red Fruit and Almond Muffins – a perfect snack for your lunch box

Yeah it’s National Almond Day today and we’re up to lunch box idea 15 in our 365 lunch box ideas. So we had to hunt down something on this theme and share a lunch box recipe full of almonds with you. These are really quick and easy and totally delicious, so why not give them a go.

Now a few facts on almonds:

Almonds are the perfect nut of choice! Adding that complimentary crunch and taste, almonds also provide a powerhouse of essential nutrients. A natural source of protein and fibre, almonds are also high in 9 essential nutrients, including vitamin E and calcium.  So whether you keep a stash in your office desk or some in a handy tin in your handbag, they make that perfect healthy snack whilst on-the-go.

Some schools are nut-free, so please check first before sending the kids in with some in their lunch box.

Now to the recipe:

Red Fruits and Almonds Muffins created by: Almond Board of California

Makes 30

Ingredients:

  • 150g flour
  • 100g ground almonds
  • 1 pinch of salt
  • 170g sugar
  • 1 egg
  • 3tsp sunflower oil
  • 250ml milk
  • 200g red fruit mixture (fresh or deep-frozen)
  • 100g sliced almonds

Method:

Butter 12 muffin tins of medium size.

Sieve in one bowl the flour, almonds in powder, salt and sugar. Beat in another bowl the egg with sugar, oil and milk until the mixture is smooth. Blend delicately the two-made mixtures with a wooden spoon. Add the red fruit and the sliced almonds to the final mixture to avoid stirring too much. Tip the mixture into muffin tins.

Bake for 20 minutes at 200° C or until an inserted knife emerges from it dry.

Store in an airtight container to keep them at their best – the recipe makes a batch of 30!
