Lunch Box Idea 16 – Cheese, Ham, Red Pepper Pancake

Quick and Easy Pancake Idea with Primula

Today is the turn of lunch box idea 16 and Shrove Tuesday or Pancake Day is upon us, and we all know this means pancakes. So here’s a quick and easy recipe to pop in that lunch box using ingredients you most likely will have to hand…

Primula Cheese & Ham with fresh Red Pepper Pancakes

Ingredients:

  •  4 large ready-made pancakes
  • 1 x 150g tube Primula Cheese & Ham Spread
  • 1 fresh red pepper, deseeded & sliced
  • Handful of basil leaves (optional)

Method:

1. Squeeze lines of Primula Cheese & Ham on half of 1 pancake

2. Fold the other half over it & press closed

4. Cut into 2 equal segments

5. Now squeeze some Primula Cheese & Ham on both of the separate

segments and add some red pepper slices

6. Fold over the top segment to make a plump, chunky pancake sandwich

7. Repeat this with the remaining pancakes

8. Wrap with cling film or foil

Pop in the lunch box for lunchtime!

With these colours, this is sure to bring a smile to your face! We love the crunch that red pepper gives you with every bite. There’s something about a satisfying crunch in your lunch… Now if you don’t have red pepper to hand, you can substitute it for tomato, but add the tomato just before eating, otherwise the juices may make the pancake a little soggy…
