Lunchbox Ideas : Easter Baking

Easter is almost upon us! Eeek! Where did the time go? So it’s time for a post on lunchbox ideas for Easter baking. Kids are still at school until Thursday! How did that happen? We had the same at Christmas, they broke up from school so late, there was no real run up to Christmas… Easter seems to be going the same way…
So we must put our best foot forward and pop those Easter treats in the school lunchbox!
So what lunch box ideas do we have up our sleeves for Easter?

If I think back to this time last year, we’d already baked up egg shaped cookies to give to our nearest and dearest. We’d made the traditional Easter nests, you know, the ones made with chocolate and shredded wheat, for that extra special “nest” effect? The list goes on, we’d baked vanilla cupcakes too and scattered the Easter chicks over them…
This year though, Easter is early… And I mean really early!
So although I had these great grand plans of baking, baking and more baking. I’ve all the ingredients together, all patiently waiting in the baking cupboard, to be gathered together, assembled and made into delicious treats.  It, err, has rather gone out the window this past weekend…

So this week’s evenings, yes, you’ve guessed it! It’s a short four day week! These evenings are going to be FUN packed nights of baking delight!
