Lunch Box Idea 36 – Broccoli and Bacon Quiche

At Lunchbox World we often get asked what to put in the lunch box for older kids, for teenagers and adults too. I mean, once they’re at secondary school (which two of mine now are) they need a bit more to sustain them. Their day is longer, as they bus to and from school, so what should we be giving them? So today we are bringing you a new lunch box idea.

The lunch box and its contents has to cover their whole day away from home, and be enough to keep them going for the rest of the day, without them simply filling up on carbs or sweet treats at breaktime…

So here is a great recipe for just that – providing something easy to eat, healthy and nutritious and with that combination of carbs and protein that’ll keep them fuller for longer. We’ll come back to other healthy snacks we can be giving them next time! So do pop back or better still, follow us so you don’t miss a single lunch box idea!

Broccoli and Bacon Quiche

So to the recipe:

Serves: 4
Preparation time: 20 minutes
Cooking time:  50 minutes

You will need the following ingredients:

500g short crust pastry
1tbsp olive oil
100g bacon lardons
1 garlic clove finely chopped
350g Tenderstem broccoli
4 free range eggs
200ml double cream
Salt and cracked black pepper

Method:

1. Preheat the oven to 200°c (400°f, gas mark 6)
2. Roll out the pastry and line a 16cm spring form tin. Prick the base of the pastry and chill in the fridge.
3. Heat the oil in a small frying pan, add the lardons and cook until almost crisp. Add the garlic and cook for another 30 seconds. Remove from the heat and leave to cool slightly.
4. Sprinkle lardons and garlic over the base of the pastry and fill the case with Tenderstem.
5. Beat the eggs, cream and season with salt and pepper. Then pour the mixture into the case.
6. Bake in the middle of the oven for 45 minutes or until set. Serve warm with a side salad.

Or if popping in that lunch box, allow to cool completely, then portion up and store in an airtight container in the fridge.

To help keep it looking its best until lunch time, we would recommend you pop the lunch box inside a lunch bag that’s insulated and ideally use an icepack. If at work, pop it in the fridge if there is one, or if for school, it should be ok in an insulated lunch bag with icepack.
