Lunch Box Idea 1 – Ultimate Sandwich

So here goes. You may have seen I decided to write 365 lunch box ideas in just 365 days. I know, it’s a big challenge. I wrote it down. (I read if you write down your goal you are more certain to achieve it). It’s Day One. So it’s time to start my 365 lunch box idea challenge. Today’s idea is lunch box idea 1 Ultimate Sandwich.  Let’s kick this off the healthy way with the ultimate sandwich. Now you may have your own ideas of what is THE ultimate sandwich?

Well, being Chinese New Year and all, and of course January we have to kick this off with a mega healthy sandwich. Some say it’s the healthiest sandwich possible, nutrition wise…

Lunch box idea 1 – Ultimate Sandwich

Ultimate Healthy Sandwich

The Ingredients you will need:

  • 2 slices of Genius bread
  • 2 oz turkey breast
  • 3 oz cherries (pitted and halved)
  • 1 oz mild blue cheese, such as gorgonzola
  • 1 teaspoon sherry vinegar
  • salt and pepper
  • rocket
  • olive oil

Method:

Combine the cherries and vinegar in a small, glass bowl and season well with salt and pepper. Mix and set the mixture aside to macerate for at least 10 minutes. In a separate small bowl, toss the rocket leaves with a little olive oil and set aside. Layer the rocket, turkey breast, and cheese, then top with the cherry mixture, including any juices in the bowl. Close the sandwich with the top piece of bread, press down until it’s flattened, and wrap it in aluminium foil. Place the wrapped sandwich on a heated pan or on the grill and weight it down with a heavy object. Grill for about 10 minutes turning the sandwich over half way through. The bread should be toasted and the cheese is melted. Let it rest in the foil for 3 to 4 minutes before eating.

NB Turkey and cherry sandwiches should be eaten as part of a balanced diet.

Tip:  best eaten immediately

Q Why is this sandwich considered to be so nutritious?

A More athletes and celebrities are opting for a gluten free diet. Genuis bread is gluten free.

The combination of turkey and cherries creates a super sarnie – cherries are full of antioxidants, turkey has the protein. This together with the sodium, iron, calcium, vitamins A, C provided by the gorgonzola, the rocket and the sherry vinegar creates the ultimate sandwich.

A The Queen Margaret University in Edinburgh created this ultimate sandwich.
