Lunch Box Idea 19 – Chorizo, Red Pepper, Cheddar

We’re mid-way through National Sandwich Week and today it’s lunch box idea 19 in our series of 365 lunch box ideas. Here’s a delicious quick and simple sandwich recipe for you to try. We’ve been doing a little poll on twitter to find out what are your favourite fillings, and cheddar is definitely one of them!

So if you’ve got these ingredients in the fridge, why not rustle up one of these today for lunch!

CHORIZO, RED PEPPER AND CHEDDAR

Spanish chorizo, roasted red pepper and cheddar with a smoked paprika mayo on focaccia

You will need the following ingredients:

  •  2 slices focaccia
  • 50g Pilgrims Choice Lighter Cheddar
  • 6 slices chorizo sausage
  • ½ roasted pepper, sliced
  • 1 tbsp mayonnaise

Method:

Grill the slices of focaccia, top with the mayo followed by the chorizo, cheese and pepper. Top with the other slice of focaccia and serve

It really is that simple!

Tip: Mix some paprika into the mayo for a smoky taste

Tip 2: substitute the chorizo for salami, if you want less of a kick

    What kind of neck, the variety of frets, the pickups, the
    sorts of bridges and what wooden is the instrument made of.
    I also preserve glancing with the clock so I can be positive not to above cook our dinner.

    Combine Eggs, milk, cinnamon and vanilla in large bowl.
