Today it’s lunch box idea 20. A rather patriotic recipe idea, following the grand events happening at Harrods on Wednesday. We’re feeling more and more patriotic each day. So we’re starting our patriotic lunch box ideas in the run up to the Royal Jubilee. Now these could be for picnics, for eating outside or popping in a lunch box.
Patriotic Marinated sausages with horseradish and Aunt Bessie’s Mini Yorkshires
Serves 6
Ingredients:
- 6 beef sausages
- 1 tbsp runny honey
- 2 tbsp grainy mustard
- 1 tbsp olive oil
- 3 tbsp crème fraiche
- 3 tbsp horseradish sauce
- 18 Aunt Bessie’s Mini Yorkshire Puddings
- Watercress sprigs
- Salt and freshly ground black pepper
Method:
Preheat the oven to 200°C/180°C fan oven/gas mark 6. Put the sausages in a roasting tin and add the honey, mustard and olive oil. Toss everything together to mix well then roast in the oven for 20-30 minutes until golden and cooked through.
Mix the crème fraiche and horseradish sauce together in a bowl and season well. Set aside.
Take the sausages out of the oven and put the Yorkshires on a flat baking sheet. Cook in the oven for 4 minutes.
Slice the sausages into chunks. Spoon a little of the horseradish cream into each Yorkshire and top with a couple of slices of sausage and sprig of watercress.
Serve straightaway.
