Today it’s lunch box idea 25 and these Pepper Chilli and Cream Cheese Yorkshires are perfect for any Jubilee celebration picnic, or even popped into a lunch box and served up for lunch! And with all the celebrations around the corner, it’s a good idea to have a few easy recipes up your sleeve.
These are made with mini yorkshires so help with that portion control too!
To make, you will need the following ingredients:
Serves 6
- 1 red pepper
- 100g cream cheese
- 2 tbsp sweet chilli sauce
- A squeeze of lime juice
- 18 Aunt Bessie Mini Yorkshire Puddings
- Sprigs of parsley
Method:
Preheat the grill. Cut the pepper into quarters, remove the stalk and any seeds, then cut a thin slice off the top of each quarter. Rest each, skin-side up, on a baking sheet. Place under the grill and cook until the skin has turned black. Put in a bowl, cover, and set aside for 10-15 minutes.
Meanwhile, mix together the cream cheese, chilli sauce and lime juice in a bowl.
When the pepper quarters have cooled, peel off the skin, then finely chop the flesh.
Preheat the oven to 200°C/180°C fan oven/gas mark 6. Put the Mini Yorkshires on a baking sheet and bake in the oven for 4 minutes. Remove from the oven. Place on a platter.
Divide the cream cheese mixture evenly among the Yorkshires. Top with the chopped pepper and a sprig of parsley and serve immediately.
