If you love hummus dips, you will love these sandwiches. These Hummus and Carrot Sandwiches are healthy and nutritious, and made in just 5 minutes. I love hummus and I love carrots, so a great combo with that element of crunch which I seem to always crave at lunchtime. Plus you’ve heard me say it a million times! We eat with our eyes so the more colourful it is, the better it is!
Hummus and Carrot Sandwiches
Ingredients
- Half a pot of fresh Hummus dip
- 1 large carrot
- Multigrain bread
Instructions
- Spread multigrain or wholemeal bread with hummus (reduced fat if you’re feeling extra good!)
- Grate the carrot
- Top with crunchy grated carrot. Perfect for everyone’s packed lunch box.
A quick tip: don’t make too far in advance of eating them, as they may go soggy if prepared the night before. So I would recommend making them early in the morning at the earliest, and NOT the night before. Let us know how you get on!
Or if you really are pressed for time and need to pack the night before, I would urge you to de-construct it. So what I mean by this, is pack the bread separately. Have the hummus in a separate sealed pot. And have the grated carrot in a separate pot. So just before eating you can assemble them all! A kind of DIY sandwich idea, that you assemble just before eating! Enjoy!
